Berry Smoothie Bowl

Smoothie bowls are fantastic because they are easy, fun and taste absolutely amazing (they also make for a great insta pic). What I love about smoothie bowls is that you can get so creative and give a colourful spin on the plain old yoghurt and granola. So, I decided to give this trend a try and went for a very simple berry smoothie topped with almonds, chia seeds, banana, and raspberries.

I was really chuffed with how this turned out. I will add that although this seems as if it is for one person you could definitely share it with someone, otherwise you can blend the rest of the ingredients and save it for a real smoothie later. If you do happen to recreate this I would love to see your pictures so, please either tag me or tweet me your lovely creations. Enjoy!

Raspberry Chia Pudding

Can I just say, chia pudding is so delicious! If you haven’t you have got to give it a try. Also, trying to get fruit to stick to the side of a glass is so much harder than I thought it would be. I tried everything, from first just sticking the kiwi in, to pouring the chia pudding in and then adding the kiwi, to adding honey to the sides to help it stick. Nothing worked! Until I put them in a few at a time and let them freeze in between each time. But, it was completely worth it in the end because it looked absolutely beautiful. I will add that even though the pomegranate juice is an optional add, I would definitely consider adding it to tie with the pomegranate seed toppings.

If you do happen to make your own chia pudding using this recipe, I would love to see your creations. So, either tag or tweet me your lovely pictures and don’t forget to enjoy it!

Salted Caramel Chocolate Brownies

Who doesn’t enjoy a steaming cup of hot chocolate on a cold winters night? And what better to go with it than a gooey decadent salted caramel chocolate brownie. I am a sucker for anything caramel, let alone salted caramel! So I decided to give these beauties a bash and me-oh-my are they delicious. With a gooey centre filled with Nutella and caramel, sprinkled with a bit of sea salt, these are to die for.

They are SUPER! chocolatey, so if you love a rich chocolate brownie then you’re in for a treat, but if you’re like me and a slice of chocolate cake is a bit too much then half will be just enough to indulge in. Also, don’t get too worried if the caramel seems really watery, the brownie will sort itself out in the oven and end up just fine.

I was really pleased with how these turned out and had so much fun licking the batter out of the bowl 😉 I would love to see some pictures if you end up baking these, so let’s make the hashtag #nicadybakes. I hope you enjoy them!
